Tell her to pack for the weekend and that you’re going to a surprise destination. Arrange to have the ring placed on her pillow wrapped as a mint while you’re out to dinner.

Have everything you need (license, etc.) and a cheap ring, pick her up and drive or fly to Reno or Vegas and replace the cheap ring with the real one just before the ceremony.
